Whenever you make carne asada tacos and beans, you will always have leftovers. OK, maybe not always, but more often than not.
You know how it is? You’re having a BBQ. You estimate the meat. You count the guests. You worry about the non RSVP people (you know who you are). You then decide, better safe than sorry. You buy double the amount of meat. Way more than you need, but no fear! Nachos, baby. Nachos!
I know, I know. Nachos aren’t brain science. Honestly, I’m not doing this post as a recipe, just as a reminder. A reminder to all! Carne asada nachos are the bomb!
This tasty treat from mostly leftovers, costs you almost nothing. I’ll admit to purchasing additional cheese and sour cream, but even the chips and guacamole were leftover.
Such a yummy dinner, for so little money. And yes, it was dinner! I was so full, I didn’t even finish my serving.
Carne Asada Nachos:
Cooked Carne Asada meat – leftovers Cook your own: $1.99 -2.99/lb, pre-marinated
1/2 package corn chips – leftovers
8 oz shredded Cheddarella Cheese – $1.50
1 1/2 cups pinto beans (drained) – leftovers
1 cup sour cream – $1.50
Guacamole – leftovers (2 avos and some tomato and chile would be less than $2.50)COST: $3 (using leftovers – try it sometime)
Again, this is a no brainer. Make your layers; chips, cheese, meat, beans, more cheese, and bake at 350 for about 5-7 mins or so. Watch carefully, making sure they don’t burn.
Serve hot with sour cream and guacamole. If serving at a party, add some fresh tomato, lettuce and cilantro for garnish. We didn’t care. We were hungry and it was just us. But tomato and cilantro sure do make the dish pretty! Like I always say though, pretty don’t mean it tastes good. However, garnish does make your guests feel special.
What’s special is a meal for $3! So don’t forget your nachos!
