Ice Cream Cake goes old school – $2 bucks!

I love Ice Cream Cake!
OK. Who remembers ice cream logs? Not the overpriced Baskin Robbins rolls, but the ones they sold in the grocery store. The simple ones. The cheap ones. OMG! I loved those things. I always asked for that instead of a cake and ice cream separate. Something about the mixture that made it so perfect.

You’re probably saying, then make your own! Sure. I’ve seen recipes for log rolls, but I don’t have a jelly roll pan. Plus, it wasn’t the log that made it yummy, it was the combination. So, me? I don’t care about shape. I care about taste. Plus, I had leftover cake from my skateboard cake and didn’t want to waste it.

Voila! Ice cream cake! Check it out! A dessert for $2 bucks!

Ice Cream Cake:

Leftover chocolate cake. It doesn’t matter the pieces or shapes. Boxed brownies could work too, if you want something more rich.

2-3 cups Ice Cream, softened slightly (flavor is your choice) – $2.00

Using a glass bowl, mash down the chocolate cake pieces to create layer one. Use your hands. Then, using a firm plastic spoon or paddle, place about 2 cups of ice cream and mash into place. Using your hands again, mash the top layer of cake. Cover bowl with tight lid or plastic wrap.  Freeze for at least 4 hours before serving.

And there you go…for almost no money and very little effort, you’ve got a seriously delicious dessert!
