Spring is here! So as I strolled through the meat and butcher area, searching for deals, I jumped on Ahi for $6.99 a pound. I just needed a decent sized steak and I knew right a way what I’d do with it!

As for the kabob, I always buy a bag of frozen, shell and tail on shrimp. Usually Sav-A-Lot has it for $4.99 a bag, which has a count of about 30-45 medium shrimp. You can do so much with these, like kabob!

Shrimp Kabob:

15-20 Shrimp (1/2 pkg, shell on, deveined) – $2.01
1 Large Onion – $.28
2 Red Pepper, cut into 1 1/2 inch pieces – $1.76
1 Lemon – $.20
1 Clove Garlic, minced – $.10
2 glugs Tequila – pantry (ok, maybe not in yours, but in ours! You can leave out, if you choose)
Hand full of chopped cilantro – $.10
3 Tbsp Olive or Canola Oil – pantry
1 tsp Salt – pantry
1 tsp Pepper – pantry
2 tsp Red Chile Powder (Use paprika for mild flavor) – pantry

COST: $4.45

In a large resealable plastic bag or a glass bowl with lid, combine shrimp, garlic, salt, pepper, cilantro, paprika, oil and tequila. Juice lemon and add to bowl. Toss.

Cut onion into wedges. Cut Red Pepper into 2 inch squares. Combine the cut veggies with shrimp and marinade. Seal in bag or leave in glass bowl and refrigerate for 2 hours, turning occasionally.

When ready to grill, thread the shrimp and vegetables on metal or water soaked wooden skewers. Grill kabobs, covered, over medium heat for 2-3 minutes on each side or until shrimp turn pink.

Seared Ahi on Spinach Salad:

1 Large piece of Ahi Tuna (about a 1/2 pound) – $3.09
One Baby Spinach bunch (if you can buy cheap, prewashed, do it) – $.75
1 Roma Tomato – $.15
10 sliced baby carrots – $.33
1 Green Pepper – $.44
1 tsp fresh ground black pepper – pantry
2 tsps Soul or Cajun Seasoning – pantry
1 Tbsp Canola Oil – pantry

COST: $4.76

Season each side of the tuna with salt, pepper and cajun/soul seasoning, heavily. Heat oil in a large, heavy skillet over high heat. The pan should be hot, slightly smoky. Place seasoned tuna in the pan, and sear on each side for about 1 minute. Remove from pan and let rest.

Plate salads and then slice seared tuna into 1/4 inch thick slices and fan onto salad. Enjoy plain, or with the dressing of your choice.
