Breakfast, brunch or dinner! This is an awesome Mexican meal. It’s inexpensive, beautiful to serve and very yummy to your tummy!
My number one recommendation to all of you is this…if you like Mexican food, you must get some red chili powder in your pantry. It’s inexpensive and very versatile.
This particular recipe melds chilaquiles and huevos rancheros together. Sorta. It’s not really a ranchero sauce, more like a chile gravy with meat. But you get the drift. Who the hell cares anyway, right? It’s friggin’ tasty!
Huevos y Carne con Chile Rojo (Eggs and Beef Red Chile):
8-10 Eggs – $1.20
1 small can refried beans – $.69
1 lb beef strips (I used cheap breakfast steak on sale) – $2.02
8-10 corn tortillas – $.50
1/2 cup canola oil – $.60
1 1/2 Tbsp Lard or Shortening (you could use oil, but I like lard flavor) – $.20
1 Tbsp flour – $.10
3-4 Tbsp New Mexico Red Chili Powder (add more for heat, but you may need more lard too) – $.45
1/2 tsp salt (may need a little more) – pantry
1/2 tsp garlic powder – pantry
1 cup water (to start – add more to desired consistency as sauce cooks)
1/4 cup cheese – $.25
1 pkg Corn Tortillas (Fresh is best) – $1.50COST: $7.51
Slice beef steaks to 1/4 inch thick strips. You can use pre-sliced fajita strips too, they just tend to be more costly per pound.
In lard, fry beef in large skillet till cooked and nicely browned. Next, add flour and stir until well blended. Cook 1 min. Quickly add red chili powder and mix well. Cook 1 more min. Stir or whisk in 1 cup water and bring to boil then reduce to fast simmer.
During this same simmering time, you may need to add more water, 1/4 cup at a time. You don’t want to water down too much. You want a consistency of creamy soup and a nice deep red color.
After sauce has cooked for 10 minutes, add salt and garlic powder to taste. Continue cooking and stirring occasionally for 10 to 15 minutes more.
While sauce is cooking, heat 1/4 cup of oil for your corn tortillas in a small fry pan and the other 1/4 cup in another fry pan for your eggs. In small sauce pan, heat refried beans and season with pepper, if desired.
The next steps all come together quickly so get your cheese prepared.
Step 1 – Fry your corn tortillas in hot oil till lightly browned and slightly crispy. When done, drain on paper towel and plate.
Step 2 – Place a layer of beans on top of corn tortilla
Step 3 – Top with fried egg and smother with chile rojo
Step 4 – Sprinkle with cheese and serve with additional warm tortillas.
GRAND TOTAL: $7.51

Thanks, I am starting to feel better. Yes the layers were perfect and scrumptous! No fresh torts since I am staying away from flour 🙁 but we had corn torts with the meal. Can’t wait until I can have flour again and fresh tortillas.
