The Ultimate Ice Cream Sandwich!

My family loves Ice Cream Sandwiches. I usually keep it simple, chocolate chip cookies and vanilla or cookies n’ cream. Not today! We’re going for the ULTIMATE ice cream sandwich – The Chocolate Moose Track and Peanut Butter Cookie Sandwich! The big Daddy of ice cream sandwiches. The king. The most fabulous combination of chocolate and peanut butter that just melts in your mouth, literally!

But, before you can make sandwiches, you need cookies. Big cookies!

Peanut Butter Cookies

2 1/4 cups all-purpose flour – $.75
1 cup butter – $1.00
1 cup peanut butter, cream or chunky – $1.00
1/2 cup granulated sugar – $.30
1 cup packed brown sugar – $.75
1 large egg – $.15
1 tsp vanilla extract – pantry
1 tsp baking soda – pantry
1 tsp salt – pantry

COST: $3.95

Preheat oven to 375 degrees.

Mix flour, baking soda and salt in bowl and set aside.

Cream together butter, peanut butter, sugars, and vanilla extract in large bowl. Beat in eggs, then gradually add the flour mixture into the creamed mixture. Batter should come together and be rather stiff.

Form into medium sized balls and place onto ungreased baking sheet. Using a fork, make hash marks while pressing cookie flat. About 1/2 inch thick.  Bake 10-12 minutes or until golden brown.  The larger the cookie, the more it needs to cook.

Once cookies are COMPLETELY cool, you can make your Ice Cream Sandwiches.

With ice cream ($3.00 a quart) slightly soft, place a heaping tablespoon on one cookie and sandwich with another. Immediately wrap in plastic wrap and place in freezer. Freeze cookies for 1-2 hours before serving.

It’s really, really hard to wait, so you might want to do this when the kids are playing outside or at school. Otherwise they will drive you crazy bugging for the cookie early. But you really do want the cookie to freeze for at least an hour. It will set nicely and hold up to warm kiddo hands.

So that’s it! The ultimate and easy ice cream sandwich. Mix and match flavors. Don’t be shy. You really can’t mess these up and for under $7, you can easily make 10 good sized sandwiches. Now that’s a deal!
