Spinach Stuffed Pork Chop with Caprese Salad

I found stuffed pork chops for an unbelievable price. $4.25 for two big ones. I’ve mentioned before, always check your local grocers or butcher for Manager’s Specials and capitalize when you can!

But, I’m sure you’re also noticing, one package only feeds two. And you’re right. This was a meal that put me over budget a bit, but I wanted to still share with you because even if was a little more costly, it’s beautifully presented and could easily be served for a dinner party or romantic dinner for two. And if you think about it, feeding a family of 4 for less than $14, it’s still very impressive. Especially when you consider the presentation and yummy factor. Isn’t Caprese salad so beautiful?

Stuffed Pork Chops:

PREMADE COST: $4.25 per package (I bought two packages to feed the whole family, but the kids split one , so we had leftovers)

Caprese Salad:

2-3 vine ripe tomatoes, depending on size – $1.50
Fresh basil – $.50
1 package of a fresh mozzarella ball (large size or package with 2 small balls) – $3.99 (shop around because prices vary from store to store. I’ve seen some places ask as high as 8.99!)
Extra virgin olive oil – pantry
Pepper to taste – pantry (optional)

COST: $4.99

Slice tomatoes about 1/4 inch thick. Fresh is best, but vine ripe from the store will have to do in the off season.

Next, slice mozzarella into 1/4 inch thick slices and set aside. Clean and prepare basil. You can leave whole or chop the leaves coarsely.

Now, begin alternating slices of tomatoes and mozzarella, adding a basil leaf between each or topping with basil as I did. You can prepare per dish or serve on a platter. This salad is great for an appetizer at dinner parties as well.

And last, but not least, don’t forget to drizzle the layers with quality extra-virgin olive oil and season with coarse salt and pepper. Enjoy!
